Pulse-Based Nutrition Education Intervention Among High School Students to Enhance Knowledge, Attitudes, and Practices: Pilot for a Formative Survey Study

Increasingly, attention is being paid to consuming plant-based food products, including pulses, which comprise dry beans, lentils, chickpeas, and peas. Recognizing their health benefits, the most recent version of Canada’s Food Guide, released in 2019, emphasizes the consumption of pulses [6]. Pulses are rich in protein, micronutrients, and fiber and low in fat. Pulses also have a low glycemic index. Although Canada produces and exports pulse crops, most Canadians consume very little pulse-based food.
